Voici une recette traditionnelle et donc authentique de brandade de poisson, celle de Nîmes est très renommée, et il suffira d'y goûter pour comprendre pourquoi !
Légère autant que savoureuse cette brandade pourra faire le bonheur de vos apéro et entre amis ou servir d'entrée servie sur une écrasée de pommes de terre, avec un filet d'huile d'olive.
Rien de compliqué à produire, c'est un jeu d'enfant.
Alors qu'est-ce qu'on attend pour se faire plaisir ?
Ingrédients:
800 gr de morue salée
25 cl d'huile d'olive
25 cl de lait
2 gousses d'ail
1 bouquet garni
poivre
la veille:
Laver le poisson pour retirer l'excédent de sel du poisson
retirer l'arrête centrale
couvrir le poisson d'eau pour dessaler le poisson, et la changer toutes les 6h pendant 24h
placer le poisson toujours la peau vers le haut et si possible mettre
le poisson dans un égouttoir dans une grande calotte ce qui facilitera le changement d'eau
couvrir d'un film
le lendemain:
remplir une casserole d'eau et y mettre le poisson le bouquet garni, l'ail dégermé et le poivre
porter l'eau à ébullition, puis couper le feu et laisser le tout reposer 15 mn
le poisson va terminer de cuire tranquillement
après 15 mn égoutter la morue, jeter le bouquet garni et le poivre, gardez l'ail.
émietter le poisson et retirer les arrêtes,
gardez la peau du poisson qui va lier la brandade avec son collagène.
on peu mixer les ail avec le poisson ce qui va apporter plus de goût.
mettre le lait et l'huile a tiédir sur le feu.
mixer le poisson :
2 techniques:
par à-coup pour une texture plus filandreuse et garder de la mâche en bouche
en continue pour un résultat plus lisse
ajouter le lait et mixer puis l'huile qui va monter la brandade.
rectifier l'assaisonnement.
