Basicly all of his halberd attacks (expect the most powerfull smashes) are parryable. Here I listed the most easiest parry scenarios for small parry shields. Normal shield timings might be little more strict and Parrying Dagger timings might be little later. No idea how katana parry would work here.

THE JUMPING ATTACK: He usually does this to close in the distance when you are too far for other attacks. Very easy to parry. When he is at the top of his jump or just about to begin descending hit the parry button. I kept my eyes on his legs to estimate the timing. Example here: 00:13

TWO POKES + SMASH: Keep your distance so close that you just avoid the first two pokes (or tank them) and therefore trigger the third move of the combo. Parry the smash. Keep your eyes on the blade part of his weapon. The smash starts with the blade visiting his left side (your right), continues to high on his right side (your left), movement slows down for a fraction of a second and then the blade comes down smashing you. Hit the parry button just when the blade starts to come down, during the short slow phase or just after it. It is easier than it sounds. Example of the parry here: 00:31

SLOWLY STARTING HORIZONTAL SWIPE: There are two versions of this move but you can parry them basicly the same way. First version starts little lower (00:47) and the other higher (01:14 ). Again hit the parry button right when the actual swing starts or fraction of a second later. It takes some practise and is the hardest parry to pull off that I list here because the starting animation is so slow that it is easy to parry too soon.

PHASE 2, CHARGE+SWIPE: Boss charges at you and then swings his weapon. The point of his weapon deals damage during the first part of the charge but if you can outrange that you can parry the swipe easily. Keep your eyes on the torso of the boss. As soon as he starts to twist himself while running to begin the swipe hit the parry button. The timing is precise but the twist is a good indicator on when to parry.

WHAT NOT TO DO: Do not parry the one poke + smashing swipe. I didn't figure it out so I can't recommend it. Also during the phase 2, if he starts a combo with his fist, dodge right as soon as you dodge the fist. Otherwise he tackles you. Example: 01:33
