Zucchini Mint and Goat Cheese Gratin recipe, just like in Corsica

Crazy easy recipe, and incredibly delicious! This vegetarian dish is inspired by Corsican cuisine, where zucchini are often married with fresh goat or sheep cheese and mint.
Now here is a great dish to try and become French and perfect! Corsica is a jewel of France and of French cuisine. Although some natives of this small island in the South of France were not always very... Well, you'll see in the video!

Gratin de courgettes // Zucchini Gratin

5 organic zucchinis (to keep the skin)
3 tbsp mint
1 fresh goat cheese
3 eggs
3 tbsp creme fraiche or crema mexicana or heavy cream
Salt and pepper

Preheat your oven at 350F
Cut the zucchinis in very thin slices
Dice the mint
Whip the eggs, add the cream, add salt and pepper
Pour the zucchini and the mint in a large gratin dish
Add the egg and cream
Crumble the goat cheese on top
Bake for 45 minutes
