This watermelon cold soup is the best refreshing appetizer in the summer. And it's so easy!
Soupe de Pasteque
1 cucumber
3 pounds watermelon
1 onion
3 tbsp mint
3 tbsp cider vinegar
salt and pepper
Chop the peeled onion and pour in a blender with the mint leaves. Process until smooth.
Reserve 3 tbsp of cucumber and 3 tbsp watermelon diced in 1/2' cubes
Pour the cucumber and the watermelon and blend.
Add the vinegar, and salt and pepper
Leave in the fridge for at least 2 hours
